Cajun Cabbage Jambalaya — a spicy, low-carb twist on a Southern classic!
🌶️ Cajun Cabbage Jambalaya
Bold, smoky flavor with tender cabbage and sausage — a one-pot wonder with a kick!
🥘 Ingredients:
1 lb smoked sausage (or andouille), sliced
1 small head of green cabbage, chopped
1 onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 can diced tomatoes (14.5 oz), undrained
1 tbsp tomato paste (optional, for richness)
1 tsp Cajun seasoning (or more to taste)
1/2 tsp smoked paprika
Salt and pepper to taste
2 tbsp olive oil
Optional: hot sauce, cooked rice or cauliflower rice (if not doing low-carb)
🔥 Instructions:
Cook the sausage:
In a large skillet or pot, heat 1 tbsp olive oil over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
Sauté the veggies:
Add remaining oil, onion, bell pepper, and garlic to the pan. Cook until softened, about 5 minutes.
Add cabbage & seasonings:
Stir in chopped cabbage, diced tomatoes, tomato paste (if using), Cajun seasoning, paprika, salt, and pepper. Mix well.
Simmer:
Return the sausage to the pot. Cover and cook for 15–20 minutes, stirring occasionally, until cabbage is tender and flavors are well combined.
Optional:
Serve over cooked rice or cauliflower rice for a fuller meal.
