Ingredients:

4 boneless, skinless chicken breasts or thighs

1 cup BBQ sauce (sweet or smoky, depending on your taste)

1 can pineapple rings (or 1 fresh pineapple, sliced)

1 tbsp soy sauce (optional, for depth)

1 tsp garlic powder

½ tsp ginger powder or fresh grated ginger (optional)

Salt & pepper to taste

Green onions and sesame seeds for garnish (optional)

Instructions:

Marinate Chicken
In a bowl, mix BBQ sauce, soy sauce, garlic, ginger, salt, and pepper. Coat the chicken and let it marinate for at least 30 minutes (or overnight for best flavor).

Grill or Bake

Grill: Preheat grill to medium-high. Grill chicken for 5–7 minutes per side, brushing with extra BBQ sauce. Grill pineapple rings for 1–2 minutes per side until caramelized.

Bake: Preheat oven to 400°F (200°C). Place chicken in a baking dish, top with pineapple slices, and bake for 25–30 minutes or until fully cooked.

Serve
Plate the chicken with grilled/baked pineapple on top. Garnish with chopped green onions and sesame seeds. Great with coconut rice, grilled veggies, or a tropical slaw.
