🍞 Tasty Lentil Bread
A hearty, gluten-free loaf made with simple, clean ingredients
🌱 Ingredients:
1 cup dry red lentils (or green), rinsed
1 ½ cups water (for soaking)
3 eggs
2 tbsp olive oil
1 tsp baking powder
½ tsp baking soda
1 tsp salt
½ tsp garlic powder
½ tsp cumin (optional for warmth)
2 tbsp flaxseed meal or chia seeds (optional for added fiber)
Optional: chopped herbs, grated carrots, or sunflower seeds for texture
🔪 Instructions:
1. Soak the Lentils:
Soak lentils in 1 ½ cups of water for at least 3 hours (or overnight).
Do not drain the water — you’ll blend it all together!
2. Blend the Batter:
Preheat oven to 350°F (175°C).
In a blender, add soaked lentils (with water), eggs, olive oil, baking powder, baking soda, salt, garlic powder, and spices.
Blend until very smooth (like a thick pancake batter).
3. Customize (Optional):
Stir in flax/chia, herbs, or veggies if using. Don’t blend these in—fold them after blending.
4. Bake:
Pour batter into a greased or parchment-lined loaf pan.
Bake for 35–45 minutes, until a toothpick comes out clean and the top is golden and firm.
5. Cool & Slice:
Let cool in the pan for 10–15 minutes, then transfer to a rack to cool completely.
Slice and enjoy! Great with hummus, avocado, or nut butter.
