A Quick, Healthy, and Flavor-Packed One-Pan Meal
π§ Ingredients (Serves 2β4):
2 salmon fillets (6 oz each, skin-on or skinless)
1 bunch of asparagus (woody ends trimmed)
2 tbsp olive oil or melted butter
2 cloves garlic (minced)
Juice of Β½ lemon (plus slices for garnish)
1 tsp lemon zest (optional but brightens flavor)
Β½ tsp dried Italian herbs or dill
Salt and freshly ground black pepper, to taste
Fresh parsley (chopped, for garnish)
πͺ Instructions:
1. Preheat the Oven:
Set to 400Β°F (200Β°C).
2. Prepare the Foil Packets:
Tear 2 large pieces of aluminum foil (enough to wrap each fillet completely).
Divide asparagus evenly between the two sheets, laying them in the center.
3. Season the Salmon:
Pat salmon dry with paper towels.
In a small bowl, mix olive oil, garlic, lemon juice, lemon zest, herbs, salt, and pepper.
Place a salmon fillet on top of the asparagus in each foil sheet.
Spoon the lemon-garlic mixture over the salmon and veggies.
Top with a few lemon slices.
4. Wrap It Up:
Fold the foil over the salmon and seal the edges to make a closed packet.
5. Bake:
Place foil packets on a baking sheet.
Bake for 15β18 minutes, depending on the thickness of the salmon. Thicker fillets may take closer to 20 minutes.
6. Serve:
Carefully open the foil (watch for steam!).
Garnish with chopped parsley and more lemon if desired.
