π₯ Potatoes and Green Beans with Sausage
Ingredients:
1 lb smoked sausage (kielbasa or andouille), sliced into rounds
1 lb baby potatoes (or chopped russets), halved or quartered
12 oz fresh green beans, trimmed
2β3 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
Salt & pepper to taste
Optional: red pepper flakes, lemon juice, or fresh herbs for garnish
Instructions:
Prep the potatoes:
Parboil potatoes in salted water for 8β10 minutes until just fork-tender (or microwave with a splash of water in a covered bowl for 6β7 minutes). Drain and set aside.
Cook it all together (Stovetop Method):
In a large skillet, heat 1 tbsp oil over medium-high heat.
Add sausage and cook until browned, 4β5 minutes. Remove and set aside.
Add remaining oil, potatoes, and green beans to the pan. Season with garlic powder, onion powder, paprika, salt, and pepper.
Cover and cook 10β12 minutes, stirring occasionally, until potatoes are golden and green beans are tender.
Return sausage to the pan and toss to combine. Heat through.
Serve hot, with a squeeze of lemon or sprinkle of fresh parsley if youβre feeling fancy!
Sheet Pan Option:
Toss everything with oil and seasoning, spread on a baking sheet, and roast at 400Β°F (200Β°C) for 25β30 min, flipping halfway.
