π§ Ingredients:
2 slices sourdough bread (toasted, if desired)
1/2 cup cottage cheese (creamy, full-fat recommended)
1 large ripe tomato (or a handful of cherry tomatoes), sliced
1 tbsp extra virgin olive oil
1β2 tsp balsamic vinegar (or a drizzle of balsamic glaze)
1/2 tsp dried oregano (or a few leaves of fresh)
Flaky sea salt, to taste
Black pepper (optional)

Toast the bread (optional): Crisp it lightly to hold toppings better.
Spread cottage cheese generously across the slices.
Layer tomato slices over the cheese.
