Ingredients

For the Crust:

1½ cups graham cracker crumbs (or vanilla wafer crumbs)

¼ cup granulated sugar

6 tbsp unsalted butter, melted

For the Raspberry Swirl:

1 cup fresh or frozen raspberries

2 tbsp sugar

1 tsp lemon juice

1 tsp cornstarch mixed with 1 tsp cold water

For the Cheesecake Filling:

12 oz white chocolate, chopped

3 (8 oz) packages cream cheese, softened

¾ cup granulated sugar

3 large eggs

1 tsp vanilla extract

½ cup sour cream

¼ cup heavy cream

Instructions

1. Make the Crust:

Preheat oven to 325°F (160°C).

Combine crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.

Bake for 10 minutes. Let cool.

2. Make the Raspberry Swirl:

In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until soft.

Stir in the cornstarch mixture. Cook for 1–2 more minutes until thickened.

Strain through a fine mesh sieve to remove seeds. Let cool.

3. Prepare the Cheesecake Batter:

Melt white chocolate gently over a double boiler or in the microwave. Let cool slightly.

In a large bowl, beat cream cheese and sugar until smooth.

Add eggs one at a time, mixing on low. Add vanilla, sour cream, and heavy cream.

Mix in melted white chocolate until fully incorporated.

4. Assemble and Bake:

Pour half the cheesecake batter over the crust.

Drizzle half the raspberry sauce over the batter. Swirl gently with a knife.

Add the remaining batter and repeat with raspberry swirl on top.

Place pan in a water bath (wrap with foil) and bake for 55–65 minutes, or until the center is set but slightly jiggly.

Turn off oven, crack the door, and let cool inside for 1 hour.

Chill at least 4 hours or overnight before serving.
