📝 Ingredients:

2 medium carrots

2 medium zucchinis

2 medium potatoes

1 onion

1 cup green peas (fresh or frozen)

1 red bell pepper (optional, for flavor & color)

1–2 cloves garlic, minced

1 tbsp olive oil (or cooking oil of choice)

1 tsp dried herbs (like thyme or oregano)

Salt & pepper, to taste

4–6 cups vegetable broth or water

Fresh parsley or cilantro, for garnish

👩‍🍳 Preparation:

Chop the Veggies
Peel and cut carrots, zucchinis, and potatoes into bite-sized pieces. Dice the onion and bell pepper (if using).

Sauté the Base
In a large pot, heat oil over medium heat. Sauté onion until translucent. Add garlic and cook for 1 more minute.

Add the Vegetables
Stir in carrots, zucchinis, potatoes, and red bell pepper. Cook for 3–5 minutes.

Add Broth & Seasoning
Pour in enough broth or water to cover the veggies. Add dried herbs, salt, and pepper. Bring to a boil.

Simmer Until Tender
Lower heat and simmer for 20–25 minutes, or until vegetables are fork-tender.

Add Green Peas
Stir in peas during the last 5 minutes of cooking to keep them bright and tender.

Final Touch
Adjust seasoning to taste. Serve hot, garnished with fresh herbs.

✅ Tips:

Add cooked beans or lentils for a protein boost.

Try swapping in celery, corn, or tomatoes to mix it up.
