🥩 Garlic Butter Steak and Potatoes Skillet
Ingredients:
1 lb (450g) sirloin steak or ribeye, cut into 1-inch cubes
1 lb baby potatoes, halved or quartered if large
4 tbsp unsalted butter, divided
4 cloves garlic, minced
1 tbsp olive oil
1 tsp fresh rosemary or thyme (or ½ tsp dried)
Salt & black pepper to taste
Optional garnish: chopped parsley, red pepper flakes
Instructions:
Cook the Potatoes
In a large skillet (cast iron works great), heat 1 tbsp olive oil and 1 tbsp butter over medium heat. Add the potatoes, season with salt and pepper, and cook for 10–12 minutes, stirring occasionally, until golden and tender. Remove from skillet and set aside.
Sear the Steak
In the same skillet, increase heat to medium-high. Add steak cubes in a single layer (work in batches if needed). Sear for 2–3 minutes per side until browned and cooked to your liking. Remove and set aside.
Make the Garlic Butter
Reduce heat to medium. Add remaining 3 tbsp butter to the skillet along with minced garlic and herbs. Stir for 30 seconds until fragrant.
Combine & Finish
Return steak and potatoes to the skillet. Toss everything in the garlic butter until well-coated. Cook another minute to reheat if needed.
Serve
Garnish with fresh parsley or a sprinkle of chili flakes for heat. Serve hot — perfect on its own or with a side salad.
Tip: For extra flavor, finish with a squeeze of lemon or a sprinkle of Parmesan cheese!
