🍄 Air Fryer Spinach and Mushroom Orzo
🥄 Ingredients:
1 cup orzo pasta
1 tablespoon olive oil
1 cup mushrooms, sliced (button, cremini, or your favorite)
1 cup fresh spinach, chopped
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
2 tablespoons Parmesan cheese (optional, for garnish)
2 cups vegetable broth or water
👩🍳 Instructions:
Preheat air fryer to 350°F (175°C) for 2–3 minutes.
Prep your pan: Use an air fryer-safe baking dish or foil pan. Add the orzo, broth, mushrooms, garlic, olive oil, salt, and pepper. Stir to combine.
Cook in air fryer:
Place the dish in the air fryer basket and cook at 350°F for 12–15 minutes, stirring once halfway through. Orzo should be tender and liquid mostly absorbed.
Add spinach: After cooking, stir in chopped spinach while the mixture is still hot so it wilts. Let sit for 2–3 minutes.
Serve: Sprinkle with Parmesan cheese if desired. Serve warm as a side or main dish!
