1 lb boneless, skinless chicken breast, thinly sliced

2 cups mushrooms, sliced (white or cremini)

1 medium onion, thinly sliced

1 bell pepper, sliced (optional, for added color)

2 tbsp vegetable or sesame oil

2 tbsp soy sauce

1 tbsp oyster sauce (optional but recommended for depth of flavor)

1 tsp freshly ground black pepper (or more to taste)

2 garlic cloves, minced

1/2 tsp grated ginger (fresh or ground)

2 tsp cornstarch + 2 tbsp water (optional, to thicken sauce)

Prep the chicken:
Toss chicken with a pinch of salt, pepper, garlic, and ginger.

Sear the chicken:
Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
Add the chicken and stir-fry until fully cooked and lightly browned, about 5–7 minutes. Remove and set aside.

Cook the vegetables:
Add the remaining oil to the skillet. Stir-fry onions, mushrooms, and bell pepper until soft and slightly caramelized, about 4–5 minutes.

Bring it together:

Thicken the sauce (optional):
