Air Fryer Spinach and Mushroom Orzo

Ingredients:

  • 1 cup orzo pasta

  • 1 tablespoon olive oil

  • 1 cup mushrooms, sliced (baby bella or white mushrooms)

  • 1 cup fresh spinach, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon butter

  • ¼ teaspoon red pepper flakes (optional)

  • ¼ cup grated Parmesan cheese (optional)

  • Salt and pepper to taste

  • 1 ¾ cups vegetable broth or water


Instructions:

  1. Cook Orzo:

    • Boil orzo in vegetable broth or water according to package directions (about 8–10 minutes). Drain and set aside.

  2. Air Fry Vegetables:

    • In a small bowl, toss sliced mushrooms with olive oil, garlic, salt, pepper, and red pepper flakes if using.

    • Place in a heat-safe dish (like a metal or ceramic pan that fits your air fryer).

    • Air fry at 375°F (190°C) for 10 minutes, shaking or stirring halfway through.

  3. Add Spinach:

    • Add chopped spinach to the mushrooms during the last 2–3 minutes of cooking. It will wilt quickly.

  4. Combine:
