Ingredients:
1/2 cup (1 stick) unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
6 pineapple rings, cut into small chunks
6 maraschino cherries, halved
2 tablespoons brown sugar (for topping)
Optional:
Powdered sugar for dusting
A light drizzle of icing
Directions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, cream together butter, granulated sugar, and 1/4 cup brown sugar until light and fluffy.
Beat in the egg and vanilla extract until fully incorporated.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture.
Scoop tablespoon-sized balls of dough onto the prepared baking sheet. Slightly flatten with your fingers or the bottom of a glass.
Gently press 1–2 small pineapple pieces and half a cherry into the center of each cookie. Sprinkle with a pinch of brown sugar.
Bake for 10–12 minutes or until edges are just turning golden.
Allow cookies to cool completely before dusting with powdered sugar or drizzling with icing if desired.
