This is the best minestrone soup recipe, a hearty, vegetable-rich Italian soup made from scratch with plenty of fiber from the beans and vegetables. Perfect for serving with crusty bread.

- 15Ā ounce canĀ white beansĀ (drained, rinsed (cannellini beans or navy beans))
- 32Ā oz containerĀ reduced sodium chicken brothĀ (or vegetable broth for vegan)
- 2Ā teaspoonsĀ olive oil
- 1/2Ā cupĀ chopped onion
- 1Ā cupĀ diced carrots
- 1/2Ā cupĀ diced celery
- 2Ā garlic clovesĀ (minced)
- 28Ā oz canĀ petite diced tomatoes
- Parmesan cheese rindĀ (optional)
- 1Ā fresh rosemary sprig
- 2Ā bay leaves
- 2Ā tbspĀ chopped fresh basil
- 1/4Ā cupĀ chopped fresh Italian parsley
- 1/2Ā tspĀ kosher salt
- fresh black pepper
- 1Ā mediumĀ zucchiniĀ (about 8 oz each, diced)
- 2Ā cupsĀ spinachĀ (chopped fresh, if frozen defrosted)
- 2Ā cupsĀ cooked small pasta such as ditalini or orzoĀ (al dente (or gluten-free pasta)*)
- extra parmesan cheese for garnishĀ (optional)

Puree beans with 1 cup of the broth in a blender.

Heat oil in aĀ large Dutch ovenĀ orĀ potĀ overĀ medium-high heat. Add the carrots, celery,Ā onion,Ā garlicĀ andĀ stir, saute untilĀ tenderĀ andĀ fragrant, about 15 minutes.

Add the remaining broth, tomatoes, pureed beans,Ā parmesan cheeseĀ rind if using,Ā saltĀ andĀ pepper. Add the rosemary,Ā bay leaves,Ā basilĀ andĀ parsley, bring to aĀ boil, then cover andĀ cook on low 40 minutes.

Add theĀ zucchiniĀ andĀ spinach, cover andĀ simmerĀ until theĀ zucchiniĀ isĀ tender, about 8 to 10 minutes.

Remove theĀ bay leaves, rosemary sprig,Ā Parmesan rindĀ and season toĀ tasteĀ withĀ saltĀ and blackĀ pepper.

Ladle 1-1/4 cups soup into 8Ā bowlsĀ with 1/4 cupĀ pastaĀ in each and top withĀ extraĀ parmesan cheeseĀ if desired.
Notes
From around 4 or 5 ounces dry pasta. I like to cook the pasta separately so that it stays al dente and doesnāt soak up the broth. If you want to cook it in the soup, cook it in the end.
