Instructions
Melt 1 tablespoon of butter in a large skillet over medium heat. Add diced onion and cook for 3 to 4 minutes until softened.
Add ground beef to the skillet. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
Stir in minced garlic and cook for 1 minute until fragrant.
Add uncooked rice, beef broth, Italian seasoning, salt, and black pepper. Stir thoroughly.
Bring mixture to a boil. Reduce heat to low, cover, and simmer for 18 to 20 minutes until rice is tender and most liquid is absorbed.
In a small saucepan over low heat, melt remaining 2 tablespoons of butter. Stir in milk, cheddar cheese, and Parmesan cheese; cook, stirring constantly, until smooth and creamy.
Pour cheese sauce over beef and rice mixture in skillet. Stir to combine evenly.
Cook uncovered for 2 to 3 minutes. Sprinkle with chopped parsley before serving if desired.
