Keto Sweet Blueberry Biscuits

Ingredients

For the biscuits:
  • 2 cups flour
  • 1 cup cold milk
  •  cup sugar
  • 5 tablespoons cold or frozen butter
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 3 ounces blueberries fresh or dried
For the glaze:
  • 1 cup powdered sugar
  •  cup water
  • 1 teaspoon vanilla extract
  • ½ teaspoon lemon juice

Method

  1. Preheat your oven to 450°F.
  2. In a large bowl, mix the flour, salt, sugar, and baking powder.
  3. Add the cold milk and blueberries to the dry ingredients.
  4. Freeze a stick of butter for an hour, then break it into chunks. Spread the chunks evenly over the dough.
  5. Fold and knead the dough gently to distribute the butter evenly.
  6. Roll the dough on a floured surface to ¼ to ⅛ inch thick. Use a biscuit cutter to make about six biscuits.
  7. Place the biscuits on a parchment-lined baking sheet and bake for 7-12 minutes, or until golden brown.
  8. Melt 1 tablespoon of butter and brush it over the warm biscuits.
  9. In a small bowl, combine powdered sugar, water, vanilla extract, and lemon juice to make the glaze. Drizzle it over the warm biscuits.

Notes

  • For extra flavor, substitute lemon zest for some of the glaze’s lemon juice.
  • If using dried blueberries, soak them in warm water for 5-10 minutes to plump them up.
  • Serve immediately for the best texture, but leftovers can be reheated for a quick snack.
