Crockpot French Onion Meatloaf with Melted Swiss Cheese

Ingredients:
2 pounds ground beef
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup milk
2 eggs
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 packet dry onion soup mix
2 large onions, thinly sliced
2 tablespoons butter
2-3 cloves garlic, minced
1 cup beef broth
8 slices Swiss cheese
1 teaspoon fresh thyme (optional, for garnish)
Instructions:
Prepare the Meatloaf:
In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, eggs, Worcestershire sauce, salt, pepper, and the packet of dry onion soup mix. Mix until well combined.
Form the Meatloaf:
Shape the meat mixture into a loaf and place it in the crockpot.
Caramelize the Onions and Garlic:
In a skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they become golden and caramelized (about 20-25 minutes). During the last 5 minutes of cooking, add the minced garlic and continue cooking until fragrant.
Add Beef Broth:
Pour the beef broth into the onion and garlic mixture and cook until the liquid is mostly absorbed. Then, pour the caramelized onion mixture over the meatloaf in the crockpot.
Cook:
Cover the crockpot and cook on low for 6-8 hours, or until the meatloaf is fully cooked.
(Optional)
Top with Cheese and Broil:
About 10 minutes before serving, place the Swiss cheese slices on top of the meatloaf. To get a golden, crispy top, transfer the meatloaf to an oven-safe dish and broil for 2-3 minutes, until the cheese is melted and slightly browned.
Serve:
Garnish with fresh thyme, if desired. Serve hot and enjoy
