  • 250g golden syrup
  • Zest of 1 lemon + juice of ½ lemon
  • 5 tbsp breadcrumbs
  • 200g butter, softened
  • 200g golden caster sugar
  • 3 medium eggs
  • 200g self-raising flour
  • 5 tbsp milk
  • Instructions
    Step 1: Prepare the Base

    Grease a 1.5-litre oven-safe dish that fits in your air fryer.
    Mix the golden syrup, lemon zest, lemon juice, and breadcrumbs, then spread evenly over the base of the dish.

    Step 2: Make the Sponge Batter

    In a bowl, beat together the butter and sugar until light and fluffy.
    Add the eggs one at a time, beating well after each addition.
    Gently fold in the flour and milk until combined.

  • Step 3: Air Fry the Sponge

    Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
    Spoon the sponge mixture over the syrup layer, spreading it evenly.
    Cover loosely with foil to prevent excessive browning.
    Air fry at 320°F (160°C) for 30–35 minutes, or until a skewer inserted into the sponge comes out clean.

    Step 4: Serve and Enjoy

    Let the sponge cool for 5 minutes, then carefully invert onto a serving plate so the syrup drizzles over the top.
