🧀 Crispy Cheese-Stuffed Potato Balls

🥔 Ingredients:

  • 2 cups mashed potatoes (cooled)

  • 1 cup shredded mozzarella or small mozzarella cubes

  • 1/4 cup grated Parmesan (optional)

  • 1 egg (for binding)

  • 1/2 tsp garlic powder

  • Salt & pepper to taste

  • 1/4 cup chopped chives or green onions (optional)

  • 1/2 cup all-purpose flour

  • 1 beaten egg (for coating)

  • 1 cup breadcrumbs (panko preferred for extra crunch)

  • Oil for frying


🔪 Instructions:

  1. Prep the potato mixture:

    • In a bowl, mix mashed potatoes, 1 egg, garlic powder, Parmesan, salt, pepper, and chives (if using).

  2. Form the balls:

    • Scoop a tablespoon of the mixture, flatten it in your palm, place a cube or pinch of mozzarella in the center, then roll into a ball. Make sure the cheese is fully sealed inside.

  3. Coat the balls:

    • Roll each ball in flour, dip into beaten egg, then coat in breadcrumbs.

  4. Chill (optional but recommended):

    • Refrigerate for 15–20 minutes to help them hold their shape while frying.

  5. Fry:

    • Heat oil (about 350°F / 175°C) in a pan.

    • Fry the balls in batches until golden brown and crispy (about 2–3 minutes per side).

    • Drain on paper towels.

  6. Serve hot:

    • Garnish with more chives or green onions, and serve immediately while the cheese is still melty!

  • Use cheddar or pepper jack instead of mozzarella for a different flavor.

  • Add bacon bits or sautéed onions to the potato mix for extra depth.

  • Bake or air fry for a lighter version.
