I made them a lot healthier, and they are so delicious!

The crispy fried cheese makes this dish so amazing!

Enjoy two pitas filled with feta fried eggs for only 4 W-W, 420 calories and packed with 47 grams of protein.

YIELDS1 Serving

EQUIPMENT

 Non-stick frying pan
 Cooking lid
 Avocado oil spray

INGREDIENTS

 2 Joseph’s Flax, Oat Bran and Whole Wheat Pita’sAldi brand works too
 30 g Avocado
 90 g Fat free feta cheeseThenos brand
 2 Eggs
 ½ cup Pico de Gallo
 Fresh chivesTo garnish

In a medium heated non-stick frying pan, spray a light layer of avocado oil

Lightly toast the pita breads and set aside

In the same pan lower the heat to low and spray some avocado oil

Add the feta cheese into the pan

Crack the eggs right into the feta cheese

Season with salt, pepper and seasoning of choice.

Take a lid and cover the eggs up to help cook.

Once the eggs are cooked to your liking and the cheese is brown and crispy, turn the heat off.

Spread the avocado onto both of the pita breads followed by the feta fried eggs.

Garnish with some of the pico de gallo and fresh chopped scallions
