🥕🥔 Air Fryer Vegetable Croquettes – Full Recipe
Crispy on the outside, soft and flavorful inside, these veggie croquettes are perfect as a snack, appetizer, or light meal. Healthier than deep-fried, and just as satisfying!
📋 Ingredients
For the Filling:

2 medium potatoes, boiled and mashed

½ cup carrot, finely grated

½ cup green beans, finely chopped
-
¼ cup green peas (frozen or fresh)
-
1 small onion, finely chopped
-
1–2 green chilies, finely chopped (optional)
-
1 tablespoon ginger-garlic paste
-
½ teaspoon turmeric
-
1 teaspoon garam masala or curry powder
-
½ teaspoon chili powder (optional)

Salt and pepper to taste

1 tablespoon oil (for sautéing)
-
1 tablespoon chopped cilantro (optional)
-
Juice of ½ a lemon or 1 tsp amchur (dry mango powder) for tang
For Breading:

½ cup all-purpose flour or cornstarch
-
¼ cup water
-
1 cup breadcrumbs (panko or regular)

Spray or brush of oil (for air frying)

1. Prepare the Vegetable Mixture

Heat 1 tbsp oil in a pan. Add onions and sauté until translucent.

Add ginger-garlic paste and green chilies; sauté 30 seconds.

Add carrots, beans, and peas. Cook until veggies soften (5–6 mins).

Add turmeric, garam masala, chili powder, salt, and pepper.

Add mashed potatoes and mix well to combine into a thick, cohesive mixture.

Turn off heat. Stir in lemon juice or amchur and chopped cilantro.

Let mixture cool completely.
2. Shape the Croquettes

Once cooled, divide mixture into 10–12 portions.

Shape into cylinders, ovals, or discs (croquette style).
3. Bread the Croquettes

In a bowl, mix flour and water to form a thin slurry.

Dip each croquette in the slurry, then roll in breadcrumbs.

Optional: For extra crunch, double-dip in slurry and breadcrumbs again.

Chill for 15–20 minutes (optional but helps them firm up).
4. Air Fry

Preheat air fryer to 375°F (190°C).

Lightly spray or brush croquettes with oil.
-
Place in a single layer in the air fryer basket (don’t overcrowd).

Air fry for 10–12 minutes, flipping halfway through, until golden and crisp.
5. Serve

Serve hot with ketchup, green chutney, or garlic mayo.
