🥗 Mediterranean Celery Olive Salad

📝 Ingredients

Salad

  • 4–5 celery stalks, sliced thin

  • 1 cup green olives, sliced (stuffed or pitted)

  • ½ cup chopped parsley

  • ¼ cup chopped cilantro (optional but delicious)

  • 1 small red bell pepper, diced

  • 2–3 tbsp chopped black olives (optional for color, like in the picture)

  • 1–2 green onions, sliced thin (optional)

Dressing

  • 3 tbsp extra-virgin olive oil

  • 1 tbsp lemon juice

  • 1 tsp red wine vinegar (optional)

  • 1 small garlic clove, minced

  • ½ tsp dried oregano

  • ¼–½ tsp black pepper

  • Salt to taste (go light—olives add saltiness!)


🍽️ Instructions

1. Prepare the vegetables

  • Slice celery thinly.

  • Chop parsley, cilantro, and bell pepper.

  • Slice the olives.

2. Make the dressing

In a small bowl, whisk together:

  • Olive oil

  • Lemon juice

  • Red wine vinegar (optional)

  • Garlic

  • Oregano

  • Pepper

  • A pinch of salt

3. Toss the salad

  • Add all vegetables and olives to a bowl.

  • Pour dressing on top.
