🔥 Chili Garlic Grilled Chicken Skewers
Ingredients (Serves 4)
Chicken
700 g (1½ lb) boneless chicken thighs (best for juiciness)
Wooden skewers (soaked 30 min)
Marinade
3 tbsp soy sauce
2 tbsp oyster sauce
1½ tbsp fish sauce
2 tbsp honey or brown sugar
2 tbsp vegetable oil
4 cloves garlic, minced
1 tbsp grated ginger
1–2 tsp chili flakes or chili paste (to taste)
Juice of 1 lime
1 tsp black pepper
Glaze (optional but recommended)
2 tbsp honey
1 tbsp soy sauce
1 tbsp lime juice
1 tbsp sweet chili sauce
Garnish
Fresh cilantro, finely chopped
Extra chili flakes
Spicy Dipping Sauce
3 tbsp fish sauce
2 tbsp lime juice
1 tbsp brown sugar
1 tbsp chopped garlic
1–2 bird’s eye chilies, finely chopped
1 tbsp chopped cilantro
👨🍳 Instructions
Prepare Chicken
Cut chicken into thick strips or chunks.
Thread onto skewers.
Marinate
Mix all marinade ingredients.
Coat chicken well.
Marinate at least 1 hour (overnight is best).
Grill
Heat grill or grill pan to medium-high.
Grill skewers 4–5 minutes per side until charred and cooked through.
Glaze
Mix glaze ingredients.
Brush onto chicken during the last 2 minutes of grilling for a sticky finish.
Make Dipping Sauce
Mix all sauce ingredients until sugar dissolves.
Serve
Sprinkle with cilantro and chili flakes.
Serve with sticky rice or coconut rice and lime wedges.
