Savory Meatloaf with Caramelized Onion Gravy

Ingredients
For the Meatloaf:
- 1 ½ lbs ground beef (or a mix of beef and pork)
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- ½ cup milk
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- For the Caramelized Onion Gravy:
- 2 large yellow onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 teaspoon Worcestershire sauce
- Salt & pepper, to taste
- Optional: 1 teaspoon fresh thyme or ½ tsp dried
Instructions
Step 1: Make the Meatloaf
Preheat oven to 375°F (190°C).
In a large bowl, combine ground meat, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire, thyme, salt, and pepper.
Mix until just combined (don’t overmix). Shape into a loaf and place in a greased baking dish or loaf pan.
Bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C).
Let rest for 10 minutes before slicing.
Step 2: Make the Caramelized Onion Gravy
While the meatloaf bakes, heat butter and olive oil in a skillet over medium heat.
Add onions and cook slowly, stirring often, for about 20–25 minutes until golden and soft.
Stir in flour and cook for 1–2 minutes to form a roux.
Gradually whisk in beef broth and Worcestershire sauce. Simmer until thickened, about 5–7 minutes.
Season with salt, pepper, and thyme.
Step 3: Serve
Slice the meatloaf and spoon warm onion gravy generously over the top. Serve with mashed potatoes, roasted veggies, or green beans for a complete meal.
