Ingredients:

1 cup all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 cup unsweetened applesauce

1/4 cup non-fat plain Greek yogurt

1 large egg

1 tablespoon lemon zest

2 tablespoons lemon juice

1/2 teaspoon vanilla extract

1/2 cup fresh or frozen blueberries
Instructions:

Preheat your oven to 350°F (175°C) and spray a donut pan with non-stick cooking spray.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In another bowl, mix together the applesauce, Greek yogurt, egg, lemon zest, lemon juice, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

Gently fold in the blueberries.

Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.

Bake for 10-12 minutes, or until the donuts are lightly golden and a toothpick inserted into the center comes out clean.

Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
