For the Potatoes:

  • 2 medium Russet potatoes (about 1 pound), diced into 1-inch cubes
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For the Chicken:

  • 2 boneless, skinless chicken breasts (about 1 pound), diced into bite-sized pieces
  • 1 tbsp ranch seasoning mix (store-bought or homemade)
  • 1 tsp olive oil

For the Toppings:

  • 4 slices center-cut bacon, cooked and crumbled
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 1/4 cup plain nonfat Greek yogurt
  • 2 tbsp low-fat milk (to thin the Greek yogurt)
  • 2 tbsp chopped green onions (optional)

Preparation Instructions

Step 1: Prepare the Potatoes

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
