Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
Step 2: Prepare the Dough
In a large mixing bowl, combine the egg, vanilla extract, and water. Whisk until the mixture is smooth and slightly frothy.
Add the angel food cake mix to the wet ingredients and stir until a smooth batter forms. If you like your cookies a bit sweeter, mix in the powdered erythritol or your preferred sweetener.
Optional: Add a pinch of salt to balance out the sweetness, but this step is not necessary.
Step 3: Shape the Cookies
Using a tablespoon or a small cookie scoop, drop dollops of the batter onto the prepared baking sheet. Space each cookie about 1-2 inches apart, as they will spread slightly while baking.
You can slightly flatten the cookies with the back of the spoon if you prefer a thinner cookie.
Step 4: Bake the Cookies
Bake for 10-12 minutes, or until the edges of the cookies are golden brown. Keep an eye on them towards the end of baking to prevent over-baking.
The cookies will firm up as they cool, so don’t worry if they appear soft when you first take them out of the oven.
Step 5: Cool and Serve
Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
