- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, finely diced
- 1 green or red bell pepper, diced
- 1 cup long-grain white rice, rinsed
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10.75 ounce) can condensed chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Cajun seasoning (optional)
- 1/4 cup chopped fresh parsley (optional)

Instructions
Step 1: Cook the Beef
- Preheat the air fryer to 180°C (350°F). Place ground beef in a heatproof dish that fits inside your air fryer. Cook for 8–10 minutes, stirring halfway, until browned. Drain excess grease.
- Add diced onion and bell pepper to the beef and cook in the air fryer for another 5 minutes until softened.
Step 2: Cook the Rice
- In the same dish, stir in rinsed rice, diced tomatoes (with liquid), chicken broth, salt, pepper, and Cajun seasoning.
- Cover the dish tightly with foil. Air fry at 180°C (350°F) for 20–25 minutes, stirring once halfway, until the rice is tender and liquid is absorbed.
- Fluff the rice with a fork and stir in parsley before serving.
