Air Fryer Egg Muffins Recipe
Ingredients (Makes 6 muffins):
6 large eggs
1/4 cup milk (optional, for fluffiness)
1/4 cup shredded cheese (cheddar, mozzarella, etc.)
1/4 cup diced vegetables (bell peppers, onions, spinach, mushrooms, etc.)
1/4 cup cooked meat (optional: bacon, ham, sausage)
Salt and pepper to taste
Non-stick spray or silicone muffin cups
Instructions:
Preheat Air Fryer
Preheat your air fryer to 300°F (150°C).
Prepare Muffin Cups
Lightly spray silicone muffin cups with non-stick spray and place them in the air fryer basket.
Mix the Eggs
In a bowl, whisk together eggs, milk (if using), salt, and pepper.
Add Fillings
Evenly distribute the chopped veggies, cheese, and meat into each muffin cup.
Pour Egg Mixture
Pour the egg mixture into each cup, filling them about 3/4 full.
Air Fry
Air fry at 300°F (150°C) for 10–12 minutes, or until the egg is set in the center. Time may vary slightly depending on your air fryer.
Cool & Serve
Let them cool slightly before removing. Serve warm or store in the fridge for up to 4 days.
Tips:
For a low-carb version, skip milk and go heavy on veggies.
Reheat in the air fryer at 300°F for 3–4 minutes.
