Gradually add 1 cup of superfine sugar, beating until glossy and stiff peaks form. Add 1 tsp vanilla extract and 1 tsp white vinegar. Gently fold in 2 tsp cornstarch.

Preheat your air fryer to 250°F (120°C). Line the basket or a cake pan that fits your air fryer with parchment paper. Spoon the meringue into a round, creating a slight well in the center. Air fry for 45–60 minutes, or until the exterior is crisp and dry. Turn off the air fryer and let the pavlova cool inside with the door slightly open.
