Ingredients:
2 slices white or whole wheat bread
1 ripe avocado
2 large eggs
1 tbsp butter
1/4 tsp salt
1/4 tsp black pepper
4 cherry tomatoes, halved
2 tbsp red onion, diced
1/2 tsp garlic powder
1/2 tsp lemon juice
1/4 tsp paprika (optional)
Lightly toast the bread slices until golden brown.
In a small bowl, whisk eggs with a pinch of salt and black pepper.
Melt butter in a pan over low-medium heat and cook eggs, stirring gently, until soft and fluffy.
In a bowl, mash the avocado with a fork.
Add lemon juice, garlic powder, salt, and black pepper. Mix well.
Spread the mashed avocado evenly over the toasted bread.
Top with scrambled eggs, cherry tomatoes, and diced red onion.
Sprinkle with paprika or extra black pepper for extra flavor.
Plate with a lemon wedge on the side for an extra citrusy kick.
