🛒 Ingredients

For the Beef & Veggies:

  • 1 ½ lbs beef steak (flank, skirt, or sirloin), thinly sliced against the grain

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 medium onion, sliced

  • 2 tbsp olive oil (for cooking)

For the Marinade:

  • 3 tbsp olive oil

  • 2 tbsp lime juice (fresh)

  • 2 cloves garlic, minced

  • 1 tsp chili powder

  • 1 tsp smoked paprika

  • ½ tsp cumin powder

  • ½ tsp oregano (optional)

  • ½ tsp black pepper

  • ½ tsp salt

Optional for Serving:

  • Warm tortillas

  • Guacamole or avocado slices

  • Salsa or pico de gallo

  • Sour cream or Greek yogurt

  • Shredded cheese

  1. Marinate the Beef:

    • In a bowl, whisk together olive oil, lime juice, garlic, and all the spices.

    • Add beef strips, toss to coat well, cover, and refrigerate for at least 30 minutes (up to overnight for deeper flavor).

    • Heat a large skillet or grill pan over high heat.

  4. Combine:

    • Return the cooked beef to the skillet with the veggies.

    • Toss everything together for about 1–2 minutes so flavors blend.

  5. Serve:

    • Serve hot with warm tortillas.

    • Add toppings like salsa, guacamole, sour cream, or shredded cheese.
