• 1 small cabbage, shredded

• 2 carrots, grated
• 2 eggs
• 1 onion, chopped
• 2 cloves garlic, minced
• 2 tablespoons olive oil
• Salt and pepper to taste
• Soy sauce (optional)
• Parsley or green onions for garnish
Instructions:

Prepare the Vegetables: Shred the cabbage and grate the carrots. Chop the onion and mince the garlic.

Cook the Eggs: Heat 1 tablespoon of olive oil in a large pan over medium heat. Crack the eggs into the pan and scramble them until fully cooked. Remove the eggs from the pan and set aside.

Sauté the Vegetables: In the same pan, add the remaining olive oil. Sauté the onion and garlic until fragrant. Add the shredded cabbage and grated carrots, and cook for about 5-7 minutes until they start to soften.

Combine and Season: Add the scrambled eggs back into the pan. Season with salt, pepper, and soy sauce if using. Stir everything together and cook for another 2-3 minutes.

Garnish and Serve: Garnish with chopped parsley or green onions. Serve hot and enjoy!
