🧀 Cheesy Mashed Potato Puffs
Ingredients:
  • 2 cups mashed potatoes (leftovers work great!)
  • 1 large egg
  • ½ cup shredded cheddar cheese (or any melty cheese you love)
  • ¼ cup grated Parmesan cheese
  • 2–3 tablespoons chopped chives or green onions
  • 2 tablespoons flour (optional, for firmer puffs)
  • Salt & pepper to taste
  • Butter or non-stick spray for greasing the muffin tin

Optional Add-ins:
  • Cooked bacon bits
  • Minced garlic or garlic powder
  • A pinch of paprika or chili flakes
  • Diced jalapeños for heat

🧁 Instructions:
  1. Preheat oven to 400°F (200°C) and grease a mini muffin tin really well with butter or non-stick spray.
  2. Mix it up: In a bowl, combine mashed potatoes, egg, cheeses, chives, and seasonings. Stir until everything’s well mixed. Add flour if the mixture feels too soft.
  3. Fill the muffin tin: Spoon the mixture into each muffin cup, filling to the top and smoothing out the tops slightly.
  4. Bake for 20–25 minutes, or until the tops are golden brown and slightly crispy. Let cool for 5 minutes to firm up before removing.
