Golden, crispy, and loaded with veggies and melty cheese — these fritters are a tasty way to sneak in the good stuff!

🛒 Ingredients (makes about 10 fritters):

2 cups shredded veggies (zucchini, carrot, broccoli, or whatever you have!)

½ tsp salt (for draining moisture from veggies)

1 egg

½ cup shredded cheese (cheddar, mozzarella, or a mix)

¼ cup chopped green onions or red onion

¼ cup flour (or use almond flour/oat flour for gluten-free)

¼ tsp garlic powder

Salt & pepper to taste

Olive oil or butter for pan-frying

Prep the veggies:
