Chocolate Chip Cookie Dough Brownie Bombs

Ingredients:
For the Brownies:
1/2 cup unsalted butter
1 cup sugar
2 large eggs
1 tsp vanilla extract
1/3 cup cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
For the Cookie Dough Filling:
1/2 cup unsalted butter, softened
1/4 cup sugar
1/4 cup brown sugar, packed
1 tsp vanilla extract
1 cup all-purpose flour (heat-treated)
1/2 cup mini chocolate chips
1-2 tbsp milk (if needed)
For the Coating:
1 cup semi-sweet chocolate chips
1 tbsp coconut oil (optional)
Instructions:
Brownies: Preheat oven to 350°F. Grease an 8×8-inch baking pan. Melt butter and mix with sugar, eggs, and vanilla. Stir in cocoa, flour, salt, and baking powder until combined. Spread batter into the pan and bake for 20-25 minutes. Let cool completely.
Cookie Dough Filling: In a bowl, cream softened butter with sugars and vanilla. Gradually mix in flour and chocolate chips. If the dough is too crumbly, add milk until it reaches a cookie dough consistency.
Once the brownies are cool, cut them into squares. Flatten each brownie square, place a spoonful of cookie dough in the center, and reshape the brownie around the filling to form a ball.
Coating: Melt chocolate chips with coconut oil (if using) in the microwave in 30-second intervals until smooth. Dip each brownie bomb into the melted chocolate and place on a lined baking sheet.
Refrigerate until the chocolate sets.
Notes:
For extra flavor, add a pinch of salt to the melted chocolate before dipping.
