🧂 Ingredients (Serves 2)
For the Cod:
2 cod fillets (about 5–6 oz each)
Salt & pepper
½ cup whole wheat or regular flour
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
1–2 large eggs (or plant-based milk for egg-free)
1 cup Panko breadcrumbs (whole wheat if desired)
For the Chips:
2 medium russet potatoes
½ tsp paprika
½ tsp garlic powder
Salt & pepper to taste
🔪 Instructions
1. Prepare the Chips (Fries):
Wash and slice potatoes into wedges or thin fries.
Toss with seasonings (paprika, garlic powder, salt, pepper).
Add to air fryer basket in a single layer.
Air fry at 400°F (200°C) for 15–20 minutes, shaking halfway. Remove and keep warm.
2. Prepare the Cod:
Pat the cod dry. Season with salt and pepper.
Set up a breading station:
Bowl 1: Flour + paprika + garlic powder + onion powder
Bowl 2: Beaten egg (or plant milk)
Bowl 3: Panko breadcrumbs
Coat each cod piece: flour → egg → breadcrumbs. Press gently so crumbs stick.
Add breaded fillets to the air fryer basket.
3. Air Fry the Cod:
Air fry at 400°F (200°C) for 10–12 minutes, flipping halfway, until golden and the fish flakes easily with a fork (internal temp 145°F).
Tip: For extra crispiness, lightly spritz with oil spray (optional) or toast breadcrumbs first before breading.
🍋 To Serve:
Fresh lemon wedges
Light tartar sauce or Greek yogurt dip
A side of mushy peas or slaw.
