🧁 Crispy Air Fryer Mashed Potato Muffins

2 cups mashed potatoes (leftover or freshly made, cooled)

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1 large egg

2 tablespoons chopped green onions or chives

1/4 cup breadcrumbs (optional for extra crispiness)

Salt & pepper to taste

Non-stick cooking spray or oil for greasing

Optional: chopped bacon, jalapeños, garlic powder, or herbs for extra flavor
🥣 Instructions:

Preheat Air Fryer:

Set your air fryer to 375°F (190°C). Let it preheat while you prep.

Prepare the Mixture:

In a mixing bowl, combine:

Mashed potatoes

Shredded cheddar

Parmesan
-
Egg
-
Green onions

Breadcrumbs (if using)

Season with salt, pepper, and any extra spices you like.

Mix until everything is well combined.

Grease Muffin Molds:

Use silicone muffin cups (or a silicone muffin tray if it fits in your air fryer).

Lightly spray each cup with non-stick spray or brush with oil.

Scoop the potato mixture into the muffin cups. Fill about 3/4 full and gently press to shape.
