🧀 Crispy Cheese-Stuffed Potato Balls
🥔 Ingredients:

2 cups mashed potatoes (cooled)

1 cup shredded mozzarella or small mozzarella cubes

1/4 cup grated Parmesan (optional)

1 egg (for binding)

1/2 tsp garlic powder

Salt & pepper to taste

1/4 cup chopped chives or green onions (optional)

1/2 cup all-purpose flour
-
1 beaten egg (for coating)

1 cup breadcrumbs (panko preferred for extra crunch)

Oil for frying
🔪 Instructions:

Prep the potato mixture:

In a bowl, mix mashed potatoes, 1 egg, garlic powder, Parmesan, salt, pepper, and chives (if using).

Form the balls:

Scoop a tablespoon of the mixture, flatten it in your palm, place a cube or pinch of mozzarella in the center, then roll into a ball. Make sure the cheese is fully sealed inside.

Coat the balls:

Roll each ball in flour, dip into beaten egg, then coat in breadcrumbs.

Chill (optional but recommended):

Refrigerate for 15–20 minutes to help them hold their shape while frying.

Fry:

Heat oil (about 350°F / 175°C) in a pan.

Fry the balls in batches until golden brown and crispy (about 2–3 minutes per side).

Drain on paper towels.
