🥬 Crust-less Spinach Quiche
🧀 Ingredients:
1 tablespoon olive oil or butter
1 small onion, finely chopped
2 cloves garlic, minced
5 oz (about 1 packed cup) fresh spinach (or 1/2 cup frozen, thawed and squeezed)
4 large eggs
1 cup milk (dairy or unsweetened non-dairy)
1 cup shredded cheese (cheddar, Swiss, feta, or a mix)
Salt and pepper, to taste
Optional: 1/4 teaspoon nutmeg, chili flakes, or herbs like thyme or parsley
🔪 Instructions:
Preheat oven to 375°F (190°C). Lightly grease a 9-inch pie dish or baking dish.
Sauté the veggies:
Heat olive oil in a skillet over medium heat. Add onion and cook until softened (about 3-4 minutes).
Add garlic and cook for another 30 seconds.
Stir in spinach and cook just until wilted. Let cool slightly.
Mix the quiche base:
In a large bowl, whisk together eggs, milk, cheese, salt, pepper, and any optional seasonings.
Stir in the spinach mixture.
Bake:
Pour the mixture into your greased dish. Bake for 30–35 minutes, or until the center is set and the top is lightly golden.
Let cool for 5–10 minutes before slicing.
