CAULIFLOWER FRIED RICE
Get ready for a super delicious meal with very few points!! cauliflower fried rice! this is a zero point recipe on weight watchers and super delish!
INGREDIENTS
2 bags raw riced cauliflower
1 bag bean sprouts
1 bag frozen peas & carrots
4 eggs scrambled
4 scallions thinly sliced
1 Tbsp soy sauce
cooking spray
INSTRUCTIONS
In a deep skillet or wok add cooking spray. Scramble eggs and place on separate dish.
Add cauliflower in skillet and sauté for 5-6 minutes.
Add scallions and mix to fully incorporate.
Add peas and carrots until heated through. Add bean sprouts and cook till translucent.
Add scrambled eggs.
Add soy sauce to finish and serve!
Yield: 8-10 cup
