Egg Bites are perfect for meal prepping. You can add some regular or blended cottage cheese to the mix for extra protein.
This is a Sample Recipe.. you can use any meats, veggies or cheeses you want. The possibilities are endless!!
12 eggs
1/2 pound chicken sausage
1/2 cup chopped onion
1/2 cup green bell pepper
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/2 cup shredded cheddar cheese
1. Pre-heat oven to 350 lightly grease a 12 cup muffin pan or use cupcake liners
2. In a skillet over medium high heat, brown the chicken sausage, drain the fat.
3. In a large bowl beat the eggs, add onion, green pepper, salt, pepper and garlic powder. Mix in the chicken sausage and cheddar cheese. Spoon 1/3 cupfuls into the muffin cups
4. Bake in a pre-heated 350 oven for 20-25 minutes or until a knife inserted in the middle comes out clean.
