Fiery Cajun Shrimp Stuffed Jalapeños

Ingredients:

12 large jalapeño peppers, halved and seeded
1/2 pound shrimp, peeled and deveined
1 tablespoon Cajun seasoning
1 tablespoon olive oil
1/2 cup cream cheese, softened
1/4 cup shredded cheddar cheese
1/4 cup shredded mozzarella cheese
2 cloves garlic, minced
Salt and pepper to taste
Fresh parsley for garnish

Directions:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Toss the shrimp with olive oil, Cajun seasoning, salt, and pepper. Cook in a skillet over medium heat for 2-3 minutes per side, until pink and cooked through. Remove from heat and chop the shrimp into small pieces.
In a mixing bowl, combine the cream cheese, cheddar cheese, mozzarella cheese, minced garlic, and chopped shrimp. Mix until well combined.
Cut the jalapeños in half lengthwise and remove the seeds. Spoon the shrimp mixture into each jalapeño half, packing it tightly.
Place the stuffed jalapeños on the prepared baking sheet and bake for 15-20 minutes, or until the jalapeños are tender and the cheese is melted and bubbly.
Garnish with fresh parsley before serving.
