Ingredients:

1 pound ground turkey breast

1 egg

1 tsp dried thyme, divided

1 tsp garlic powder

1 tsp onion powder

2 medium onions, halved and sliced thinly

1/4 tsp black pepper

3 tsp minced garlic
-
1 tbsp balsamic vinegar

1/2 cup fat free beef broth

98 gm (about 1 cup) light mozzarella cheese, shredded
Directions:

Preheat oven to 350F. Prepare a baking sheet by spraying with oil, lining with foil or a silicon mat.

Combine the ground turkey breast, egg, 1/2 tsp dried thyme, onion and garlic powder. Mix well.

Form 24 equal meatballs (1 tbsp) and place on prepared baking sheet. Bake for 20 minutes, flipping at 10 minutes.

While the meatballs are cooking, spray a large saucepan, add sliced onions and heat on medium high heat.

Season with black pepper and 1/2 tsp dried thyme. Cook for 5 minutes, then reduce heat to low and cook for another 15 minutes, stirring occasionally.

Stir in the minced garlic, cook another minute. Stir in the balsamic vinegar and 1/2 cup of beef broth. Stir and cook another minute or so.

Add about 1/2 the onion mixture to an 8″ x 8″ square or 9″ round pan. Arrange the turkey meatballs on top. Top with the rest of the onion mixture.

Add the cheese and bake for 20-25 minutes.
