1 cup green olives, drained
½ cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
Vegetable oil, for frying
½ cup mayonnaise
1 clove garlic, minced
1 tsp lemon juice
Salt and pepper to taste
Prepare Aioli:
In a small bowl, mix mayo, garlic, lemon juice, salt, and pepper. Cover and refrigerate.
Bread the Olives:
Pat olives dry. Dredge in flour, dip in eggs, then coat with panko breadcrumbs.
Fry:
Heat oil to 350°F (175°C). Fry olives in batches until golden brown (1–2 minutes). Drain on paper towels.
Serve:
Plate with a side of garlic aioli for dipping.
