⏱ Prep Time: 15 min | Cook Time: 25–30 min | Total Time: ~45 min

🧄 Ingredients

For the Steak Bites

  • 1.5 lbs (680g) sirloin or tenderloin steak, cut into bite-sized cubes

  • 2 tbsp olive oil

  • 3 tbsp butter (unsalted)

  • 4 cloves garlic, minced

  • Salt and black pepper, to taste

  • 1 tsp smoked paprika (optional)

  • 1 tbsp chopped parsley (for garnish)

For the Roasted Vegetables

  • 1 lb (450g) baby potatoes, halved

  • 2 cups broccoli florets

  • 1 cup carrots, sliced into chunks

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • Salt and pepper, to taste

  • 1 tsp Italian seasoning (optional)

🔥 Instructions

Step 1: Roast the Vegetables

  1. Preheat oven to 425°F (220°C).

  2. On a large baking sheet, toss baby potatoes, carrots, and broccoli with olive oil, garlic powder, salt, pepper, and Italian seasoning.

  3. Roast for 25–30 minutes, stirring halfway through, until veggies are tender and slightly crispy on the edges.

Step 2: Prepare the Steak Bites

  1. While the veggies roast, pat the steak cubes dry with paper towels. Season with salt, pepper, and smoked paprika (if using).

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Add steak in a single layer (you may need to do this in batches to avoid overcrowding). Sear for about 2-3 minutes per side until browned and cooked to your desired doneness.

  4. Add butter and minced garlic to the pan. Stir and spoon the garlic butter over the steak for 1–2 minutes.

  5. Remove steak bites from heat and garnish with chopped parsley.

Step 3: Assemble & Serve

  • Arrange steak bites and roasted vegetables on a large serving plate.

  • Spoon any remaining garlic butter over the top.

  • Serve immediately and enjoy!

✅ Tips

  • Use high-quality steak for best tenderness.

  • Let the steak rest for a few minutes before serving.

  • Add red pepper flakes for a spicy kick.

  • Serve with a dipping sauce or garlic aioli if desired.
