Ingredients
- 2 large boneless, skinless chicken breasts, sliced into thin strips
- 12 oz spaghetti
- ¾ cup low-sodium chicken broth
- 1 cup shredded mozzarella cheese
- 1 cup shredded sharp cheddar cheese
- 2 oz cream cheese, softened
- ½ tsp Italian seasoning
- ½ tsp dried basil
- 2 tbsp olive oil
- 2–3 cloves garlic, minced
- 1 tsp Cajun seasoning (more to taste)
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (for serving)

Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook spaghetti according to package directions until al dente. Drain and set aside.
Step 2: Cook the Chicken
- Season chicken strips with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until golden brown and cooked through, about 5–6 minutes. Remove from skillet and set aside.
Step 3: Make the Sauce
- In the same skillet, add garlic and sauté until fragrant (about 1 minute).
- Pour in chicken broth and bring to a simmer.
- Stir in cream cheese until melted and smooth.
- Add mozzarella and cheddar, stirring until melted into a creamy sauce.
- Season with Italian seasoning, dried basil, and more Cajun seasoning if desired.
Step 4: Combine & Serve
- Add cooked spaghetti and chicken back into the skillet, tossing to coat in the sauce.
- Simmer for 2–3 minutes until everything is heated through and creamy.
- Garnish with chopped parsley and grated Parmesan cheese before serving.
