Healthy cookies without flour and sugar

Ingredients

  • 70 g dried apricots

  • 50 g walnuts

  • 70 g hazelnuts

  • 60 g almonds

  • 20 g pine nuts

  • 30 g pumpkin seeds

  • 40 g sunflower seeds

  • 20 g sesame seeds

  • 20 g flaxseeds

  • 40 ml natural honey

  • 1 egg white

  • A pinch of salt

Instructions

  1. Preheat oven to 170°C (340°F). Line a baking tray with parchment paper.

  2. Soften apricots: soak in warm water for 5 minutes, then drain well.

  3. Chop nuts & seeds: pulse walnuts, hazelnuts, almonds, and pine nuts in a food processor until coarse (do not make flour).

  4. Finely chop the dried apricots.

  5. Transfer everything to a bowl. Add pumpkin seeds, sunflower seeds, sesame seeds, flaxseeds, and salt.

  6. Add honey and egg white. Mix well until the mixture sticks together.

  7. Shape cookies: form small balls or flatten slightly into cookie shapes.

  8. Place on tray and bake for 15–18 minutes, until lightly golden.

  9. Cool completely — they firm up as they cool.


Tips:

  • Add orange zest or cinnamon for classic Mediterranean aroma

  • Drizzle melted dark chocolate (85%) on top (optional)

  • For vegan version: replace egg white with 1 tbsp chia seeds + 3 tbsp water
