High Protein Banana Pudding!

Ingredients
• 1 medium banana (mashed)
• 1 scoop vanilla protein powder (about 30g)
• 2 tbsp Greek yogurt (plain, high-protein)
• 1 tbsp almond or oat flour (optional for texture)
• 1/4 cup unsweetened almond milk (or any milk alternative)
• 1 egg (for structure and extra protein)
• 1/4 tsp vanilla extract (optional, for flavor)
• Pinch of cinnamon (optional)
• 1 tsp baking powder
Optional Toppings
• Sliced banana
• Peanut butter drizzle
• Crushed nuts
• A dollop of Greek yogurt
Instructions
1. Prepare the Batter:
• In a bowl, mash the banana until smooth.
• Mix in the vanilla protein powder, Greek yogurt, almond or oat flour, egg, almond milk, vanilla extract, cinnamon, and baking powder. Stir until well combined. The batter should be thick but pourable.
2. Transfer to Air Fryer-Safe Dish:
• Pour the batter into a small, greased, air fryer-safe ramekin or dish.
3. Air Fry:
• Preheat the air fryer to 180°C (350°F).
• Place the ramekin in the air fryer and cook for 8–10 minutes, or until the pudding sets and a toothpick inserted into the center comes out clean.
4. Cool and Top:
• Let the pudding cool slightly. Add your favorite toppings like banana slices, a drizzle of peanut butter, or a dollop of Greek yogurt.
5. Serve and Enjoy:
