🐟🍋 Lemon Butter Salmon with Roasted Potatoes & Broccoli

A healthy, zesty dinner that’s rich in omega-3s and flavor — all done on one sheet pan!

📝 Ingredients (Serves 2–3):

For the Salmon:

2 salmon fillets (5–6 oz each, skin-on or skinless)

2 tbsp butter, melted

2 cloves garlic, minced

Juice of 1 lemon

1 tsp lemon zest

Salt & black pepper, to taste

Optional: fresh dill or parsley for garnish

For the Roasted Veggies:

2 cups baby potatoes, halved

2 cups broccoli florets

1½ tbsp olive oil

½ tsp garlic powder

Salt & pepper to taste


👩‍🍳 Instructions:

Preheat the Oven:
Preheat to 400°F (200°C). Line a baking sheet with parchment or foil for easy cleanup.

Prepare the Potatoes & Broccoli:

Toss baby potatoes in half the olive oil, garlic powder, salt, and pepper.

Spread on the baking sheet and roast for 15 minutes.

Prepare the Salmon:

While potatoes roast, mix melted butter, lemon juice, zest, and garlic.

Pat the salmon dry and season with salt and pepper.

Spoon the lemon butter over each fillet.

Add Broccoli & Salmon:

Add broccoli to the baking sheet, tossing with remaining olive oil and seasoning.

Nestle the salmon fillets onto the tray.

Roast everything for an additional 12–15 minutes, or until salmon flakes easily and potatoes are tender.

Serve:

Garnish with fresh herbs and extra lemon wedges if desired.
